Mondays! I always felt kind of bad for Mondays. I mean it must be hard to follow Saturday and Sunday – the 2 chillest days of the week and mark the end of the weekend. Buuuuut, Mondays can mean something good too…like the beginning of a new week, new start and new goals. With crock pot dinners on Monday I am able to ease myself back into our weekly routines. Oh, how sweet this Monday will be with this sticky, sweet and flavorful crock pot Teriyaki Chicken.

- Boneless chicken – breasts or thighs work well with this recipe.
- Soy Sauce – I use reduced sodium because my husband has high blood pressure and personally I think regular soy sauce is too salty.
- Honey – I have made this with brown sugar as well but since I’m trying to reduce sweets in my diet I eliminated brown sugar and left it just with honey and it still taste good.
- Ginger – Lately I have been using ginger in many of my recipes. It adds a nice subtle tangy taste
- Garlic

Getting It Started
To get this recipe started, add the soy sauce, honey, water, garlic and ginger to the base of your slow cooker. Whisk together until smooth, then add the chicken breasts, turning to coat in the sauce.
Cook on LOW for 3-4 hours
Thickening The Sauce
Once the chicken is cooked through, it’s time to thicken the sauce. Remove chicken pieces from crock pot with sloted spoon.
Mix together the cornstarch with water until fully dissolved. Lift the lid of the slow cooker, add the cornstarch slurry, and mix it in as best as you can with a spatula. Replace the lid on the slow cooker as quickly as you can, turn the slow cooker to high, and simmer for 10 – 20 minutes.
At this point, the liquid should be bubbly and thick.
Garnish and Serve
Add the chicken pieces back into the crock pot and coat with sauce. Serve with a side of rice or on a bed of greens and garnish with green onions and sesame seeds – totally optional.
Want To Add Vegetables?
I like to add broccoli florets and carrot slices to the crock pot the last hour of cooking. This ensures that my veggies won’t be overcooked. Keep in mind that they may add extra water to the crock pot and you may need more cornstarch to thicken the sauce.
Does it Have to be a Crock Pot?
Not at all. When I originally wrote this post I had a crock pot gifted to me from my mom so I used that. I now use a PowerXL 12-in-1 combo. It’s an air fryer, roaster, rice maker, and slow cooker among 8 other things. Any slow cooker will work but I do love the PowerXL because it does so many other things. It eliminates the need for additional kitchen tools and maximizes my kitchen space.

Equipment

Ingredients
- 2 lbs Boneless chicken breasts or thighs, cut into 1 inch pieces
- 1/2 cup Reduce sodium soy sauce
- 4 tbsp Honey
- 2 tsp Ginger, minced
- 2 cloves of garlic, minced
- 1 tbs cornstarch to thicken sauce (optional)
Optional Toppings
- Chopped cilantro
- Green onions
- Sesame seeds
Instructions
Directions
- Add soy sauce, honey and seasoning to your crockpot and stir until combined
- Add chicken and stir again to ensure the chicken is coated with the sauce
- Cook on LOW for 4-6 hours
- Remove chicken from the crockpot and set aside (use slotted spoon to keep sauce in crockpot)
- Strain the sauce from the crockpot and pour it into a medium size pan.
- Cook the sauce over medium heat until the sauce is reduced, about 5-8 minutes
- Once the sauce is thick, add the chicken to the pan with the sauce. Stir and serve.
- Serve with a side of rice or on a bed of greens
