Confession – I’ve gained some weight. I was in an accident 1 month postpartum and couldn’t walk for 6 months. Shortly after relearning to walk and going back to work we went into quarantine. Needless to say, the pregnancy weight just didn’t shed like it did the previous times. It has made me more than uncomfortable in my own skin and its time to change that beginning with what I’m eating. I’m trying to eat lots of vegetables and fruits, whole grains, proteins (I struggle with this because I’m not a meat eater), limiting highly and ultra-processed foods and lastly, drinking more water. This Green Goddess Cobb salad is a great main course. It is full of veggies and protein and taste absolutely delish. It’s time to rethink salads because this one is far from boring and ready in no time at all.
What Makes Green Goddess Cobb Salad Delish?
This salad is irresistibly delish because the ingredients add a variety of flavors, texture, and is topped with the best plant based Greener Goddess dressing by Healthy Choice!
INGREDIENTS:
Romaine Lettuce – I love romaine lettuce because it’s crunchy and has a nice flavor
Chicken – You can use grilled chicken breast, thinly sliced or diced. You can also use sliced rotisserie chicken.
Bacon – Crisp the bacon in the oven. I like using my air fryer because it comes out perfect every time. I haven’t mastered that consistency in my oven yet.
Tomatoes – I love using cherry tomatoes but sometimes I use regular garden tomatoes because my daughter snacks on the cherry tomatoes.
Shallots or Red Onions – Red onions are a bit bold in flavor and my kids prefer shallots which have a mild taste.
Feta – I like the taste of feta over blue cheese but if you like blue cheese then use blue cheese.
Hard-boiled Eggs – There are many methods for cooking hard-boiled eggs but my favorite is with my air fryer. 16 minutes at 250 works with my air fryer. You can get more details from Recipe Diaries
Avocado – I love the creaminess of avocados. Use 1-2 ripe avocados chopped or thinly sliced.
Green Salad Dressing – I Like Greener Goddess Dressing from Healthy Choice. It is totally plant based and taste great!
How to Make a Cobb Salad
Like any salad it is just a matter of layering all of the ingredients on a large platter or on individual plates. When I have extra time I serve on individual plates for some added points in the presentation department and serve immediately.
Serving Later?
If you are planning to serve later then prep everything the same way except hold off on the avocados and salad dressing till it is time to serve. Keep covered in the fridge until ready to eat.

Green Goddess Cobb Salad
Ingredients
- 6 cups chopped romaine lettuce 1-2 heads
- 12 oz chicken breast, thinly sliced or diced
- 8 slices bacon, cooked crisped and chopped
- 1 cups cherry tomatoes, halved
- 4 large hard boiled eggs, peeled and quartered
- 1-2 ripe avocados, diced
- 1 large shallots OR 1 large red onion, thinly sliced
- 4 oz feta cheese
- green goddess dressing
Instructions
- On a large platter, arrange the romaine lettuce with chicken, bacon, tomatoes, eggs, avocados, shallots, and feta on top.
- Spoon the Green Goddess Dressing over the salad and serve.
