I made this fun spring inspired popcorn as a snack with the kids. Last week the weather was really nice – the birds were chirping, sun was out and temperature was in the 60’s. This week we are back in the 30’s and the kids are feeling restless for spring. While I cannot control mother nature’s fickle ways I decided to cheer my kids up with a batch of spring popcorn mix. Ā This was a fun activity with the kids and super easy, so I wanted to share it with you! Get ready for a mom win.

Pop of Spring Popcorn Mix Ingredients
- Freshly popped popcorn
- Lightly salted pretzels for a salty sweet taste
- Rainbow sprinkles (I found confetti sprinkles on Walmart.com)
- Colored Candy melts (our pink was substituted for white courtesy of Walmart.com)
- Easter (pastel colored) candy corn or marshmallows from Lucky Charms cereal
Fun fact: Lucky Charms has always been my favorite cereal. My mom & sister would send me care packages when I was in college and as a Peace Corp volunteer in Belize and always include boxes of Lucky Charms.
Directions:
- Pop your popcorn and spread it out evenly on a lined (easy clean up) baking sheet
- Melt your candy melts according to the package instructions; half a cup is plenty
- Drizzle the melted candy all over your popcorn
- Add on your layer of candy corn
- Add pretzels
- Finish your Pop of Spring Popcorn Mix with a layer of confetti sprinkles
- Let sit until the candy hardensāabout 15 minutes. Pair with a shamrock shake and Enjoy!
Fun Tip:
Make popcorn the old fashion way – on stovetop. You miss something with the microwave popcorn bags. My two youngest get the biggest kick waiting for the first kernal to pop.
