If you ever thought fast and healthy just don’t go together, you’re not alone. I use to think the same dang thing! I would spend so long cooking weeknight meals that we would be eating around 8 or 9 pm. But thanks to Pinterest and some friends – I learned that healthy and fast can actually go together and taste delish.

Here’s What We Ate This Week
- Monday – Pasta with a homemade hearty sauce packed with zucchini, carrots, eggplant and spinach.
- Tuesday – Sausage, apples, potatoes (russet and sweet) and Brussel sprouts with a side of rice.
- Wednesday– Left Overs
- Thursday – Ground Turkey and Cauliflower stew with crusty bread.
- Friday – We eat takeout
Monday weeknight Meals
Pasta jammed packed with veggies is always a hit in my family and it doesn’t take long. It could even take less time if you pre-cut and freeze your veggies on the weekend. I can’t remember the last time I bought spaghetti sauce. We just prefer this version – a can of crushed tomatoes, can of tomato paste, add seasoning, fennel and a pinch of nutmeg. Sautéed your veggies and ground meat. Add to sauce and then add cooked pasta and you’re done. My kids love this veggie packed healthy meal. It’s definitely a weeknight win.
Tuesday weeknight Meals
My friends are always surprised when I tell them my kids eat Brussel sprouts. Funny story, my daughter did a worksheet for parent’s night and on it she wrote how she loves my cooking especially my Brussel sprouts even though they look burnt they taste good. For the record I had seared those Brussel sprouts – they weren’t burnt. But, she put it out there and parent’s were reading and laughing a part of me wanted to run the other part of me wanted to take a red pen and add – they weren’t burnt, they were seared. But, I ended up laughing it off.
Back to this dish – you can sautéed everything or you can wrap everything in aluminum foil on a sheet pan and cook in the oven. Both ways taste good just be sure to cut the potatoes small enough to cook through or you’ll be waiting a really long time to eat.
Wednesday leftovers
I know some people are funny with leftovers but I don’t like wasting food and my family don’t mind eating left overs so there’s that.
Thursday night dinner was a Pinterest find years ago and in the beginning I wondered whether this would be filling – the answer is YES! And taste delish! It has sesame oil, soy sauce and a little hot sauce to give it a nutty, tangy flavor with a mild kick.
Friday night
We do a fun family night and order take out. Sometimes we watch a movie , play board games or go out to the lake or park to eat.

I will try to post recipes for each of these but honestly these are just my throw togethers so I rarely ever measure anything. I got the ideas from Pinterest but I modified them over the years that it’s no longer the same recipe. I know that may sound frustrating because my grandma use to say the same thing to me when I wanted to cook her staple dishes. Oddly enough, I now understand what she meant. However, I will try my best to create a recipe for you to follow and maybe make for your family.
